Flour Test Device and Extensograph are used for testing flours and pastes in combine test devices in laboratory. These devices, which are installed on one chassis, facilitate working conditions in laboratory.
This device has five parts: paste mixer tank, paste former mechanism, paste former cylinder, paste extension hook, and paste chamber. All these parts work in 30°C.
Flour Test Device is used to specify the rheological features of paste and provides extensive features for the resulted bread. The resistance of paste against the blades is drawn as a curve and is shown on the monitor with the following results.
The obtained parameters by Flour Test Device:
•    Water absorption percentage
•    Paste forming duration
•    Paste stability
•    Softness degree (E.U.)

Flour Test Device show extension and resistance of paste regularly, which is an important parameter for bread features. This feature shows the level of embodied CO2 in the paste. This system is used in mill and bread industry for controlling raw materials, additives (ascorbic acid, slulatyk enzymes, oxidation enzymes) and suitable properties of pastes and fixing these features. Four Test Device draws the related curve by weight of paste according to an standard analysis at intervals 45, 90, and 135 minutes, and analyzed data by its special software.

•    Maximum resistance (Rmax)
•    Elasticity (cm)
